    Vinegar essence (acetic acid concentrate, typically 70–80%) must never be used undiluted. To achieve a safe 5–6% preserving acidity, mix 1 part essence with approximately 12 parts cold water. Undiluted or incorrectly diluted essence can cause severe chemical burns to the mouth, throat, and digestive tract.

    Peppers are a low-acid vegetable (pH 4.65–5.45). Without water bath canning, safety depends entirely on the vinegar fully penetrating and acidifying all layers.     Sterilize the jar and lid: wash thoroughly with hot soapy water, rinse well, then place upright in a 120°C (250°F) oven for 15 minutes. Remove with clean tongs and allow to cool completely before filling.

    Wash the 2 kg of peppers, cut off their stems, and pierce each pepper 3–4 times with a needle or thin skewer. This prevents bursting during frying. Pat every pepper completely dry with a clean cloth — surface moisture causes dangerous oil splatter.
